Chewy apple and oatmeal patties by Emilie Murmure

INGREDIENTS
1 cup quick cooking rolled oats
1 cup almond powder
1 tsp baking powder
½ teaspoon cinnamon
½ block cream cheese (125g)
¼ cup brown sugar
2 eggs
¼ cup vegetable oil
¼ cup applesauce
2 peeled and diced apples
STEPS
1. Preheat the oven to 350°F. Line a baking sheet with a silicone mat or parchment paper.
2. In a bowl, combine the oats, almond powder, baking powder and cinnamon.
3. In another bowl, whisk the cream cheese with the brown sugar with an electric mixer. Add the eggs and then the oil. On low speed, add the dry ingredients alternating with the applesauce. Stir in the apples. On the baking sheet, spread 12 small patties with about 1/4 cup of the mixture.
4. Bake for 20 minutes or until the patties begin to brown. Let cool.
